Yellow Fin Tuna with Finger Lime
Ingredients
200 gm AAA Saku Tuna
Baby Herbs
½ Lime, juiced
2 tbls Olive Oil Sea Salt
Black Pepper
1-2 Finger Limes
Method
Remove the tuna from its packaging and pat dry with paper towel.
Slice the tuna with a very sharp knife in slices approximately 5mm thick, arrange on serving plates.
In a small bowl, whisk together the olive oil and lime juice, season with sea salt.
Dress the tuna with the olive oil dressing, scatter over the baby herbs. Cut the finger limes in half lengthways and gently scrape out the little pearls with a teaspoon, sprinkle over the tuna, season with cracked black pepper.
