Whole Baked Ocean Jacket with Ginger, Lime & Teriyaki Glaze

Ingredients

4 Angelakis Whole Ocean Jackets

1/2 Cup Teriyaki Sauce + Extra for Serving

1 tbls Ginger, minced

2 Cloves Garlic, minced

1 tsp Sesame Oil

2 tbls Lime Juice

1/2 tsp Sea Salt

2 Limes

2 tbls Toasted Sesame Seeds

1/4 Bunch Coriander

Method

To prepare the ocean jackets, trim the dorsal fins from the ocean jackets with a pair of sharp kitchen scissors, pat dry with paper towel. Season the fish with sea salt.

Preheat the oven to 180℃ and line a large tray with baking paper.

In a large bowl, combine the teriyaki sauce, ginger, garlic, sesame oil and lime juice, mix well.

Place the fish in the marinade and coat well. Allow to marinate for 30 minutes.

Place the whole fish on the lined baking tray and cook in the oven for 10-12 minutes or until the fish is firm and cooked through, baste once with any remaining marinade whilst cooking.

Remove from the oven, Sprinkle with the toasted sesame seeds and coriander leaves, serve with the extra teriyaki sauce and lime wedges. Serve with steamed rice and Asian greens.
