Smoked Rainbow Trout Salad with Figs & Persian Feta
Ingredients
1 Smoked Rainbow Trout
1 Radicchio Lettuce
1 Cup Mixed Salad Leaves
4-6 Figs
2 tbls Pomegranate Jewels
100 gm Persian Feta
Dill Fronds
Olive Oil
‘The Figgery’ Sticky Fig Syrup
Sea Salt
Black Pepper
Method
Wash the radicchio and salad leaves well, tear the radicchio leaves into smaller pieces, toss with the salad leaves, place on a large serving platter or in a salad bowl. Slice the figs into quarters and add to the salad.
Gently remove the skin and bones from the smoked rainbow trout and flake over the salad.
Break apart the Persian feta and sprinkle over the salad, garnish with the pomegranate jewels and the dill fronds. Drizzle over the sticky fig syrup and olive oil, season with black pepper and sea salt.
