Ling Fillets with Garlic Flowers, Abalone Mushrooms & Ginger and Soy Broth

Ingredients

2 x 150gm Ling Fillets

1 Bunch Garlic Flowers

150gm Oyster Mushrooms

1 Bunch Chinese Broccoli

Micro Herbs to Garnish (optional)

Sea Salt

Vegetable Oil

1 tsp Sesame Oil

1 tbls Ginger, finely grated

1 tbls Fish Sauce

2 tbls Soy

1 tsp Brown Sugar

1 ½ Cups Fish Stock

Method

For the broth, in a saucepan over medium heat, sauté the ginger in the sesame oil until fragrant, add the fish sauce, soy, brown sugar & fish stock. Bring to the boil, reduce heat and simmer for 4-5 minutes.

To cook the Ling fillets heat a fry pan over a high heat, season the fish with sea salt, brush with the vegetable oil. Cook the fillets for 3-4 minutes on each side, or until just cooked through. While the fish is cooking steam the Garlic flowers, oyster mushrooms and chinese broccoli until just cooked.

To serve, place the vegetables in a shallow bowl or plate, top the vegetables with the pan fried Ling, pour over the broth and garnish with the micro herbs.

Cook’s Tip

If fish stock is not available use water or chicken stock. Maybe served with steamed rice or noodles.
