Grilled Garlic & Parsley Coffin Bay Oysters
Ingredients
2 Dozen Coffin Bay Oysters
150 gm Butter
3 Cloves Garlic
2 tbls Finely Chopped Parsley
1 tbls Worcestershire sauce
1 tbls Lime Juice
Sea Salt
Black Pepper
Lime wedges, to serve
Method
Cut the butter into cubes, place in a large bowl and allow to come to room temperature.
Peel and finely chop the garlic cloves, add to the butter along with the parsley, Worcestershire sauce and lemon juice, season with sea salt and black pepper. Mix ingredients together until well combined and the butter is light & fluffy.
Preheat the grill, place the oysters on a tray then add (approximately) 1-2 teaspoons of the garlic butter to each oyster. Cook the oysters under the grill for 3-4 minutes, serve immediately with extra fresh lime wedges.
Cook’s Tip
Serve the oysters on a bed of rock salt to keep them upright and the sauce in the shell.
