Chicken Yiros with Homemade Hummus

Ingredients

600gm Chicken Yiros

2 Lebanese Cucumbers, sliced

½ Red Onion, sliced

2 Cups Salad Leaves

½ Cup Italian Parsley Leaves

100gm Feta, crumbled

4 Large Pita

1 tub Tzatziki

Hummus

1 (400gm) tin Chickpeas

2 cloves Garlic

2 tbls Lemon Juice

1 tsp ground Cumin

1 tsp Smoked Paprika

2 tbls Tahini

2 tbls Water

Sea Salt & Black Pepper

¼ Cup Olive Oil

Method

To make the Hummus, place the drained chickpeas, garlic, lemon juice, cumin, paprika & tahini in a small food processor, blend until smooth, add the olive oil in a steady stream until combined. Season with sea salt & pepper * Add the water if the consistency is too thick.

Cook the Chicken Yiros meat in a fry pan over medium heat in batches or on the BBQ, warm the pita & serve with the cucumber, onion, salad leaves, crumbled feta, tzatziki & homemade hummus

Cook’s Tip

Hummus will keep in he fridge for 3-4 days.
