Chicken Patties with Smashed Avocado

Ingredients

8 Angelakis Chicken Patties

Vegetable Oil

2 Avocados

½ Lemon, juiced

Sea Salt

Black Pepper

¼ Spanish Onion, finely chopped

½ Bunch Coriander, Finely chopped

1 tsp Dried Chilli Flakes (optional)

Method

Peel the avocados, roughly chop and place in a large bowl. Add the lemon juice, red onion and coriander, season with sea salt and black pepper (add the optional chilli flakes if required)

Mash the avocado mix with a fork until all the ingredients are combined.

To cook the chicken patties, heat a large fry pan over a medium heat, add enough vegetable oil to cover the bottom of the pan. Place the patties in the frypan and cook for 5 minutes or until golden brown, turn and cook on the other side until brown.

Serve with a green salad, smashed avocado and aioli.

Cook’s Tip

These chicken patties are delicious served with burger buns and crispy pancetta.
