Barbecued Mackerel with Chargrilled Lemon, Garlic, & Lemon Thyme
Ingredients
4 Whole Mackerel, scaled & gutted
3 Lemons
1 Bulb Garlic
1 Bunch Lemon Thyme
3 tbls Olive Oil, plus extra to serve
Sea Salt
Black Pepper
Method
Preheat the barbecue to a medium to high heat.
To prepare the fish, pat the mackerel dry with paper towel. Fill the cavities of the fish with bulbs of unpeeled garlic and sprigs of lemon thyme.
Slice the lemons in half, drizzle the mackerel and lemons with the olive oil and sprinkle with sea salt.
Place the fish on the grill plate and cook for approximately 5-7 minutes on the first side, with a spatula gently turn over and cook for a further 5 minutes or until the fish is cooked through.
While the fish is cooking add the halved lemons to the grill plate cut side down and cook until they are a dark golden brown colour.
To serve, place the mackerel on a serving platter, scatter with some extra lemon thyme, sea salt and black pepper, drizzle with olive oil and squeeze some of the charred lemon over the fish and serve the remaining lemons with the cooked mackerel.
Serve with a green salad.
