Barbecued Chilli, Lime & Garlic Prawns with Lime Mayonnaise

Ingredients

500gm Angelakis South Australian
Medium Prawns

4 Cloves Garlic, finely chopped

3 tbls Olive Oil

Sea Salt

Cracked Black Pepper

2 Limes

1 1/2 tbls Sambal Olek

2 tbls chopped parsley

Extra limes, to serve

Method

In a large bowl, whisk together the garlic, olive oil, the zest of one lime & the juice from two limes and the sambal olek, season with sea salt and black pepper. Add the prawns and toss to coat well, set aside to marinate for 30 minutes.

Heat a BBQ grill plate to hot and cook the prawns for 2 minutes on each side, serve immediately with the extra lime wedges & lime mayonnaise.

Lime Mayonnaise

In a bowl add the lime zest, juice and mayonnaise, whisk together.


Cook’s Tip

For this recipe we have left the shells on the prawns, this imparts a beautiful flavour, however the shells may be removed before marinating if required.
