Chilled Cucumber Soup with Garlic Prawns







You Need:

  • 1 pack Garlic Prawns
  • 2  telegraph cucumbers, peeled, deseeded, roughly chopped
  • 300ml Greek yoghurt
  • 75ml creme fraiche
  • 300ml chicken stock
  • 2-3 drops tabasco sauce
  • 1 teaspoon salt
  • 2 tablespoons each chopped fresh mint and chives


  1. Process cucumbers, yoghurt, creme fraiche, stock, tabasco sauce, salt and herbs in a processor to combine, place in a bowl, cover and refrigerate
  2. Gently pan fry prawns 1-2 minutes until just turned pink
  3. Place a pile of garlic prawns in each bowl, spoon soup around, garnish with herbs and season with pepper
