Salt & Pepper Squid with Dipping Sauces

You Need: (Serves 2-4)

  • 1 packet Salt & Pepper Squid
  • cooking oil
  • Lime & Sweet Chilli Mayonnaise:
  • 2 tablespoons whole egg mayonnaise
  • 1 tablespoon sweet chilli sauce
  • 1 teaspoon lime juice
  • Thai-Style Dipping Sauce:
  • 2 tablespoons soy sauce
  • 2 tablespoons rice wine vinegar
  • 1 teaspoon eshallot, finely diced
  • chopped chilli and chives to taste
  • 1 tablespoon water

Method:

  1. Shallow fry Salt & Pepper squid in 1 1/2 cups of hot cooking oil for 1-2 minutes in a wok until golden or deep fry at 180C degrees for 1-2 minutes until golden
  2. Drain on absorbent paper before serving
  3. Combine all ingredients of each dip, adjusting flavourings to taste
  4. Serve both dipping sauces on a platter with Salt & Pepper Squid
