You Need: (Serves 4)
- 1kg mussels, scrubbed and debearded
- 1/2 cup melted butter
- 1/4 cup fresh parsley, finely chopped
- 2 cloves garlic, crushed
Method:
Combine butter, parsley and garlic.
Place mussels directly onto heated barbecue plate. As mussels start to open, spoon parsley butter onto and into the mussels. Continue to add butter until all has been used, removing mussels when fully opened.
Serve on noodles or rice. Remember to remove any mussels as they open.
Mussels may be steamed instead of barbecued.
