Kingfish: Crunchy Topped Cutlets

You Need: (Serves 4)

  • 4 kingfish cutlets
  • 1/4 cup lemon juice
  • 1 tablespoon oil
  • 1 clove garlic, crushed
  • 1/4 teaspoon seasoned pepper
  • 1 cup fresh breadcrumbs
  • 1/2 cup grated cheese
  • 1/3 cup cottage cheese
  • 1/2 cup chopped mushrooms
  • 2 shallots, chopped
  • 1 egg, beaten
  • 1 teaspoon prepared mustard
  • 1/4 teaspoon pepper

 

Method:

Combine lemon juice, oil, garlic and pepper. Add cutlets and marinate for 30 minutes.

Combine breadcrumbs, cheese, cottage cheese, mushrooms, shallots, egg, mustard and pepper. Divide mixture evenly between cutlets, pressing on firmly. Bake uncovered at 180C degrees for 30 minutes or until cooked.
