Bream: Brandied, Barbecued

You Need: (Serves 4)

  • 4 whole bream, scaled and gutted
  • 1/4 cup melted butter
  • 1/3 cup brandy
  • 1 clove garlic, crushed
  • 2 tablespoons soy sauce
  • 1/2 cup sesame seeds
  • juice of 1 lemon
  • lemon wedges



Prepare a basting sauce with the butter, soy sayce, lemon juice, brandy and garlic.

Brush fish with sauce and then place on barbecue plate. Basting often with sauce, turn only once. When fish is nearly cooked, sprinkle heavily with sesame seeds, continue cooking until toasted.

Serve with lemon wedges and tossed salad.
