Barramundi: Grilled with Mango & Chilli Sauce

You Need:

  • 2 plate size (300-400g) Barramundi, scaled and gutted
  • salt and pepper
  • lemon/lime juice

Sauce

  • 2 medium sized mangos, peeled and sliced
  • 1 clove garlic
  • 1 teaspoon chopped chilli
  • 1/2 teaspoon grated ginger

 

Method:

Lightly oil and season the fish with salt, pepper and lemon or lime juice. Grill for approximately 10 minutes on each side (depending on the strength of your heat source). Test with a fork or skewer if cooked- meat must separate from the bone easily.

For the sauce, combine the mangos, garlic, chilli and ginger in a blender. If necessary, add a little water to thin out the sauce.

Serve with wild rice.
