Oysters: Natural with Chilli Vinegar

You Need: (Serves 4)natural_oysters_with_chilli

  • 1 dozen fresh oysters, shucked
  • 1/2 cup red wine vinegar
  • 1 clove garlic, very finely sliced
  • fresh watercress or sprouts
  • freshly ground black pepper, to taste
  • 1/2 teaspoon chilli sauce

 

Method:

Place the red wine vinegar, garlic, black pepper and chilli sauce into a small mixing bowl. Stir well to combine and infuse the flavours.

Place the shucked oysters onto a serving plate, top with watercress or sprouts and spoon the vinaigrette over the top of each one. Serve immediately.
