Bugs: Sweet Chilli Tails

You Need: (Serves 4)

  • 500g raw bug meat (approx 1.5kg whole bugs)
  • 1 tablespoon brown sugar or honey
  • 1/2 tablespoon ground chilli powder or 1 hot chilli, finely chopped
  • 1 tablespoon oil
  • freshly chopped parsley
  • 1 tablespoon butter



Combine all ingredients except the butter and marinate for 15 minutes.

Pan fry the bug meat in butter for 5-8 minutes

Serve on a bed of rice with a side salad.

This recipe can also be grilled, basting with the marinade during cooking or cooked on a barbecue.
